They really are so useful. I started a new project this week and immediately started to knock together an inventory - even though the team had one part done, it is such a good way to get an understanding of what you have. (maybe I'm just procrastinating?) A couple of things I've added to my spreadsheet are: Where content is updated in the CMS and of course the owner of that content as well as the Title Tag for each page (seo here I come!). Small tip: If you're doing a lot of browser work it is well worth trying Opera - you can control the back and forward buttons using the z and x keys on the keyboard - much more convenient than using the mouse (or backspace).
