I think you could find out some useful things for dynamic/non-hierarchical sites, particularly about how people do percieve groupings. But there would be other things that contribute to the IA (like the inherent qualities of the content).

And clients ask for it because consultants peddle it and life goes around in circles ;)

Personally, I find card sorting less and less useful for the types of dynamic and often non-hierarchical sites that I'm working on these days. Doesn't stop clients from asking for it tho!
